A recipe from my niece who lives in Milan. A favorite of Italians to bring to the beach during the summer. I've tried this too and it's good!
Ingredients:
fussili pasta (spiral)
dried tomatoes, jullienned
green olives, sliced in half
capers (optional)
roasted bell pepper, diced
smoked pancetta or any local ham, diced
feta cheese
extra-virgin olive oil
salt & pepper to taste
*no real proportions - just throw in the bowl to make a salad.
Directions:
1. Cook the pasta, drain and run cold water over it.
2. Mix all the ingredients then put in the fridge for about an hour before serving.
