Indoor-Grilled Steak Sandwiches With Zesty Jalapenos

Zingy lime, pungent onion, creamy avocado and fiery jalapeno peppers put the WOW back into the simple steak sandwich. Just the aroma of the steak grilling will have your family's forks poised and ready even before the serving dish hits the table!
Ingredients:
7 garlic cloves, finely minced
2 tablespoons fresh cilantro, coarsely chopped
1/2 tablespoon onion powder
1/2 teaspoon fresh ground black pepper
3 jalapeno peppers, finely chopped (do not seed)
1/3 cup extra virgin olive oil
1/2 cup fresh lime juice
3 tablespoons dijon mustard
1 teaspoon kosher salt
1 1/2 lbs sirloin steaks
12 slices thick-cut white bread, toasted (texas toast works well)
1/2 cup mayonnaise, with
1 teaspoon chili powder
1 red onion, sliced into thin rings
4 ounces farmer cheese, crumbled
1 cup romaine lettuce, coarsely torn
1 avocado, halved, seeded, peeled and sliced thin

Directions:
1. Marinade - In a small mixing bowl whisk together the garlic, cilantro, onion powder, black pepper, jalapeno peppers, olive oil, lime juice, mustard, and salt.
2. Trim fat from the beef. Use a sharp knife to score beef on both sides at 1-inch intervals in a diamond pattern. Transfer the steak to a zip-lock plastic bag; pour marinade over meat and seal bag. Let marinate for 6 to 24 hours (overnight is best).
3. Heat a well-seasoned grill pan on the stovetop over a medium flame. Remove steak from the marinade (Discard marinade - Do not reuse); lay the steak in hot grill pan. Cook 15 minutes, or until steak is medium. Turn once halfway through the grilling. Carve the steak diagonally across the grain into thin slices.
4. Meanwhile, spread one side of each toast slice with mayonnaise mixture. Arrange the steak, onions, cheese, lettuce and avocado on half the toast slices. Top with the remaining toast slices. Serve with lime wedges.
5. *Cook's Tip: WHAT IS A WELL-SEASONED PAN? Oil pan - inside and outside - with melted solid shortening or lard. (DO NOT USE LIQUID VEGETABLE OIL.) Place the pan upside down on the top rack of a pre-heated 350°F oven. (Lay aluminum foil on the bottom rack to catch the drippings.) Let the pan bake (season) for one hour.
