Indonesian Beef Rendang With Steamed Rice

This dish is one of the most famous indonesian food, beef stewed in coconut milk and wonderful spices served with stamed rice
Ingredients:
500 grams of beef, cut into bite size chunk
1 can (250 ml) of coconut milk
4 cups of water
1 stem fresh lemongrass, smash with the back of your knive
6 cloves of asian shallots
4 cloves of garlic2 small fresh red chilies
3 cloves garlic, chopped
1 tablespoon chopped fresh ginger
1 tablespoon vegetable oil
3 teaspoons ground coriander
1 teaspoon ground turmeric
2 teaspoons ground cumin
1 cinnamon stick
8 fresh salam leaves (or curry leaves)
salt , pepper and sugar
Directions:
1. Cut beef into 3cm pieces
2. mix half of the coconut milk into the water to make thin coconut milk
3. Process , chillies, shallots, garlic and ginger until smooth.
4. Heat oil in pan, add ground spices, stirring with low heat until paste is fragant.
5. add thin coconut milk, Stir in beef Add lemongrass and salam leaves, cook 20 mins or until beef is tender
6. add all other ingridients and thick coconut milk, simmer, covered, 1 hour.
7. Remove lid, simmer 1/2 hours or until beef is tender and mixture thick.
