Individual Microwave Brownies (Vegan)

This is adapted from . Instead of using the full amount of oil, you can replace the oil with 1/2 tbsp applesauce (or any mashed fruit i.e. pumpkin puree, mashed banana) and 1/ 2 tbsp oil mixed together. You could even use melted butter.... just don't use light margarine. I also think this is a bit sweet, so you can reduce the sugar to 1.5 tbsp or even 1 tbsp if you'd like. I like to drizzle peanut butter on top of this and swirl it in. Add in nuts, chocolate chips, whatever you want. Make sure you watch the microwave, it's super easy to burn!
Ingredients:
1/4 cup flour (i use whole wheat)
1/4 cup sugar (i use organic brown)
1/8 teaspoon salt
1/8 teaspoon baking powder
2 tablespoons cocoa (reduce to 1 tbsp if you like)
2 tablespoons milk (i use soy, water is fine too)
1 tablespoon oil (see above)
1 tablespoon flax seed (ground into meal or powder, optional for flax egg)
3 tablespoons boiling water (optional for flax egg)
Directions:
1. Combine the dry ingredients in a bowl.
2. Make a flax egg by combining flax and boiling water. Stir and let it stand until it becomes sticky and egg-like (20 - 30 sec). This is optional.
3. Combine the wet ingredients in a separate bowl.
4. Combine wet and dry ingredients.
5. Add to microwaveable bowl. Grease bowl with oil or butter for easy clean up. PAM won't work! It will make batter stick to bowl!
6. Scrape down sides of bowl, smooth over the top of batter. Microwave for 2 - 3 minutes until it's done (high power I think, most microwaves nowadays are high power). If your microwave has a low power, you might have to microwave it longer. It's done when the center of the brownie is dry and toothpick comes out clean when inserted down the middle.
