Ingredients:
1/2 pound lean ground round
1/4 cup egg substitute
2 tablespoons chopped onion
1 tablespoon soft breadcrumbs
1 tablespoon chopped fresh parsley
1/4 teaspoon garlic powder
1/4 teaspoon low-sodium worcestershire sauce
dash of salt
3 tablespoons ketchup, divided
cooking spray
Directions:
1. Preheat oven to 350°.
2. Combine first 8 ingredients plus 1 tablespoon ketchup in a medium bowl, stirring well. Shape mixture into 2 (5 1/2-inch) loaves. Place loaves on a rack in a roasting pan coated with cooking spray. Spread 1 tablespoon ketchup over each loaf.
3. Bake at 350° for 1 hour. Remove from oven; let stand 5 minutes before serving.
4. Tip: You'll need to make your own soft breadcrumbs. Tear 1 slice of bread into pieces, place in a blender or food processor. Pulse about 5 times. Store extra crumbs in an airtight container in the freezer.
