Indian Yellow Peas - Crockpot

Great as a main dish with naan or yummy side dish.
Ingredients:
1 cup yellow split peas
1 tbsp cumin seeds
2 tsp coriander seeds
2 tbsp olive oil
2 onions, finely chopped
4 cloves garlic, minced
1 inch ginger, grated
2 cups vegetable stock
1 14 oz can diced tomatoes
1 tbsp lemon juice
1 tsp cayenne pepper
1 tsp turmeric
1/4 cup cilantro
1/2 cup coconut milk (optional)
Directions:
1. Toast seeds in hot dry skillet for 2 minutes. Grind
2. Bring peas to boil in pot of water (3 mins), then soak for 1 hour. Rinse.
3. Heat oil in skillet and gently saute onion, garlic and ginger for 3 minutes.
4. Put all ingredients in slow cooker and cook for 4-5 hours high or 8-10 low.
5. Stir in cilantro and coconut milk, if using.
