Indian Vegetable Fried Rice with Chicken (Biryani or Pulao)

Found this recipe on the back of my basmati rice bag (Wild Harvest Organic from Albertsons). I've made it twice, ones with and once without chicken, and it's really good! Similar to what we've had in Indian restaurants. If you don't have garam masala, it's simply a blend of several more common spices - /wiki/Garam_masala. I used corriendar, cumin, black pepper, cinnamon, cloves and tumerac. Be sure to prepare most of the ingredients before you start cooking the rice.
Ingredients:
1 cup brown basmati rice
1 chicken breast, boneless, skinless, cut in cubes
2 cups water
8 oz diced tomatoes, canned, no salt added
2 tablespoons garam masala
2 tablespoons olive oil
1 lb red potatos, cut in 1 cubes
1/4 cup peas, frozen
1 cup onion, thinly sliced
2 cloves garlic
1/2 tsp sea salt
1 cup cilantro, chopped
Directions:
1. Bring 2 cups water to boil in a small saucepan. When water is boiling, add rice and return to boil. Cook rice half the time recommended on the package.
2. Meanwhile, in a small skillet sprayed with cooking spray, saute the chicken pieces until just browned on all sides. Remove from heat.
3. In another medium skillet, heat oil on medium-high. When pan is hot, add onion and garlic. Saute 1 minute.
4. Add potato and stir fry 2 minutes.
5. Add tomato and peas. Stir. Cover and cook 5 minutes.
6. Add garam masala, salt and chicken. Stir. Cover and cook 1 minute.
7. Add rice with boiling water. Stir to combine. Cover and cook 20-30 minutes or until potatos and rice are cooked through and water is gone.
8. Add cilantro and serve.
