Indian Spinach Saag

Ingredients:

  • 2 cups long- grain white rice
  • 1/4 cup of water
  • 1 tbsp sugar
  • 1 package of raw spinach
  • 1/8 cup butter
  • 1 cup of low-fat yogurt
  • 2 tbsp curry powder
  • 1 tbsp turmeric
  • 1 tbsp anise seed

Directions:

  1. Start the long-grain white rice as directed on package.
  2. Dissolve sugar in hot water.
  3. Cut spinach up into strips and fry in clarified butter.
  4. Add water and simmer for 5 min.
  5. Add yogurt and spices to taste and simmer until moist, but not runny.
  6. Serve on top of rice. Optional sides/toppings include fetta cheese and naan (indian flat bread.)
