Ingredients:

Directions:

  1. In large frying pan cook beef until brown. Add onion, garlic, curry, salt, ginger, sugar and cayenne; cook until onion is limp. Stir in peas and cook 1 min. Drain fat. Let cool.
  2. In corner of wonton skin, mound 1 T filling. Moisten edges of wonton skin, bring opposite corner over filling and press together forming triangle. Continue until all are filled. (At this point you may place filled samosas on a tray, wrap tightly with plastic and refrigerate for as long as 8 hours or may be frozen for up to a month.)
  3. Heat about 2 inches of oil in a deep pan to 360 degrees. Add 4 or 5 samosas, fry 1 - 2 minutes or till golden brown, turning to cook evenly. Drain on paper towels. Keep warm in a 200 degree oven till all are cooked. Serve warm (I like them cold as well)
  4. Serve with yogurt sauce.
  5. Yogurt Sauce:
  6. Stir together 2 c plain yogurt, 1/4 c finely chopped chutney and 1 t dry mint flakes till blended.
