Indian Samosa

This is a must have in the Indian household and a very tasty pocket. Recipe from Charishma Ramchandani through recipezaar.
Ingredients:
pastry
1c flour
2tbs veg. oil
filling
2 large potatoes,boiled
1 onion,chopped
2 green chilis,very finely chopped
3tbs oil
1/2tsp ginger,grated
1/2tsp garlic,crushed
coriander seed
1tbs cilantro,finely chopped
1/2lemon,juice of
1/2tsp tumeric
1/2tsp garam masala
1/2tsp red chili powder
salt
meat filling
1/2lb. ground meat(either lamb or beef)
1tsp cumin seed
2 whole cardamon pods
1 med oninon,cut in small dice
2tbs oil
1 garlic clove,crushed
1-2 tsp ginger paste
1tbs. curry powder
salt and pepper to taste
Directions:
1. Mix together the flour ,oil and salt
2. Add a little water,until mixture becomes crumbly
3. Keeo adding water,kneading the mixture till it becomes a soft pliable dough
4. Cover with a moist cloth and set aside for 20 mins
5. Beat dough on a work suface and knead again. Cover and set aside
6. Filling:
7. Heat 3 Tbs oil
8. Add ginger,green chilis and a few coriander seeds
9. Stir fry for 1 min.add onions and saute till light brown
10. Add cilantro(fresh coriander),lemon juice,tumeric,red chili,salt and garam masala
11. Stir fry for 2 mins.
12. Add potatoes
13. Stir fry for 2 mins
14. Set aside,allow to cool
15. Divide dough into 10 equal pieces
16. Use rolling pin t,roll a piece of dough into 5 oval.
17. Cut into 2 halves
18. Roun a moist finger along the diameter
19. Roll around finger to make a cone.
20. Place a Tbs. of filling in the cone.
21. Seal the third side using a moist finger
22. Deep fry the samosas on low to med. heat till light brown.
23. Serve with tomato sauce or any chutney you love.
24. Meat filling:
25. Brown the meat and set aside. Heat oil ina a skillet or fry pan and add cumin seeds and cardamom pods and cook 1 min. Add onions and coook until translucent. Reduce the heat and add garlic and ginger paste. Fry for 2-3 mins. Add curry powder and 3 cook 3 more mins. so that the flavors are incorporated. Season with salt and pepper to taste.
