Ingredients:
1 cup long-grain rice, uncooked
1 teaspoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/4 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1/8 teaspoon ground bay leaves
1/8 teaspoon ground cloves
1/2 cup raisins
2 cups canned no-salt-added chicken broth
Directions:
1. Cook rice in oil in a medium saucepan over medium-high heat, stirring constantly, 3 to 4 minutes or until golden. Add salt and next 5 ingredients; stir well. Cook, stirring constantly, 1 minute.
2. Add raisins and chicken broth; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until rice is tender and liquid is absorbed. Let stand 10 minutes.
