A perfect Puri resembles a fragile bubble. Discard those which don't poof. These are wonderful served warm with curry.
Ingredients:
2 tablespoons shortening
2 cups sifted all-purpose flour
1/2 teaspoon salt
1/2 cup shredded cheese
1/2-2/3 cup water
Directions:
1. Cut shortening into flour mixed with salt. Add cheese. Stir in enough water to make soft dough. Knead on floured surface for about 10 minutes. Let rest 10 minutes.
2. Roll very thin, to 16x10 inches, on floured surface. Cut into 2-1/2 inch circles. Fry in deep hot fat (385 degrees) till puffed and golden, 2 to 3 minutes, turning once. Drain.
