This recipe is from a spa resort located in the Maldives, islands off the western coast of India.
Ingredients:
1/4 teaspoon chili powder
1/4 teaspoon ginger
1/4 teaspoon garlic
1/4 teaspoon green chili pepper
1/2 teaspoon sugar
2 tablespoons yogurt, plain
1 teaspoon lemon juice
1/4 teaspoon mint leaf
1 lb cucumber, peeled
2 cups yogurt
4 garlic cloves
1/4 teaspoon salt
Directions:
1. Blend all the ingredients for the mint chutney until it becomes a smooth paste.
2. Blend all the ingredients for the yogurt soup and keep it chilled in a refrigerator.
3. To serve, transfer the yogurt soup into a chilled soup bowl. Garnish with mint chutney and fresh mint leaves.
