Indian Lentil Soup

Ingredients:
1/2 cup chopped onion
1 garlic clove
2 teaspoons curry powder
1 teaspoon crushed coriander seed
1 teaspoon crushed cumin seed
1/2 teaspoon ground turmeric
1/4 teaspoon crushed red pepper flakes
1 tablespoon olive oil
5 cups vegetable stock
4 cups water
2 cups dried lentils, sorted and rinsed
salt and pepper
6 tablespoons plain fat-free yogurt
Directions:
1. Sauté onion garlic, herbs and red pepper in oil in large saucepan until onion is tender, about 5 minutes; stirring frequently.
2. Add stock, water and lentils; heat to boiling.
3. Reduce heat and simmer, covered, until lentils are tender, about 30 minutes. Season to taste with salt and pepper.
4. Pour soup into bowls; garnish each with a tablespoon of yogurt.
