Indian Hot Corn Bread

This is a traditional East Indian bread. Not for the tender tummy but wonderful side for just about anything.
Ingredients:
2 c. self-rising cornmeal
1 c. milk
1 egg
1 (20 oz.) canned cream style corn
3/4 tsp. salt
1/2 c. bacon drippings
1 c. chopped onion
1 clove minced garlic
3 to 4 chopped jalapeno peppers
1/2 lb. grated cheddar cheese
Directions:
1. Combine all ingredients, except cheese and mix well.
2. Pour half the batter into well-greased 9×13 inch baking pan. Sprinkle half of the grated cheese over the top.
3. Add balance of batter and sprinkle remaining cheese over the top.
4. Bake in a 350 degree oven for 45 to 50 minutes until done.
5. Bread will be real moist.
6. When cool, cut into 2-inch squares.
