Great potluck salad that goes a long way. Full of wonderful taste. Enjoy
Ingredients:
2 cups dried chick peas
1 tablespoon rice wine vinegar
4 tablespoons fresh grated ginger
1 tablespoon minced garlic
2 tablespoons peanut oil
2 tablespoons coconut milk
1 teaspoon cilantro
Directions:
1. Rinse chickpeas then place in pot with water to cover by 2 inches.
2. Bring to boil then partly cover and simmer for 2 hours.
3. Let cool then stir in vinegar, ginger, garlic, oil, coconut milk and cilantro.
4. Serve at room temperature or chill for one hour.
