I came up with recipe years ago when I wanted to shed some pounds. The breasts are microwaved and the aroma of them cooking is just wonderful. They are great anytime for a healthy meal. One of the few things that can be cooked in the microwave.
Ingredients:
chicken breasts
mccormicks vegetable supreme
ok, this recipe will not turn out correct if the breasts are not cooked in the microwave. they must be covered with plastic wrap or placed in a zip lock bag that is left upzipped to cook. this way they steam as well as cook and this is how the incredible aroma and taste is achieved. if cooked in a conventional oven, it is a different dish, will not taste correct or have the aroma that makes these special.
chicken breasts can be cooked in the microwave, just don't don't over cook them. you can leave the covered plate in the over for the rest period so it is not so hot to remove
this recipe must be cooked to achieve the success, flavor and aroma that is the point to the recipe.
Directions:
1. Wash breasts
2. Careful lift skin and season meat
3. Place skin back, season skin
4. Turn the breast and on the thick side you should be able to open the meat and season inside, see pics.
5. Season bone side
6. Place one or more breasts on a paper plate and cover with clear wrap.
7. The three breasts in the pic were cooked in a 1300 watt microwave oven on high for 6.5 minutes.
8. Remove from oven, allow to rest 30 minutes.
9. Remove plastic wrap and feel each breast, they should be firm. You can also check if they are cooked by separating the meat to make sure it is not pink inside.
10. Breasts can placed in a zip lock bag and refrigerated for a couple of days.
11. As in the pic, pull meat from bone, slice, add sliced cucumbers, tomatoes or other vegetables for a great healthy lunch.
12. They are addictive and I love eating the meat right off the bone.
13. The meat is great on a sandwich or ground up for chicken salad.
