This weeknight treasure came to me Via Kraft. It's inexpensive, not to fatty and done very fast makin it perfect for weeknight dinners. I like to pair it with my little China Salad and Potstickers, with green tea ice cream for dessert
Ingredients:
1/2 lb spaghetti noodles
1/4 cup asian toasted sesame dressing
1 lb boneless skinless chicken breast, cut into small strips
2 garlic cloves
1 red bell pepper, diced
1 onion, diced
1/2 cup reduced-sodium chicken broth
1 tablespoon peanut butter
1/4 cup light soy sauce
2 tablespoons chopped cilantro
2 tablespoons chopped peanuts
Directions:
1. Cook spaghetti until done.
2. Heat dressing in a nonstick skillet, add chicken and garlic, stir fry 5 minutes until chicken is no longer pink.
3. Add vegetables, broth and peanut butter. Stir fry 5 more minutes.
4. Drain spaghetti and return to pan.
5. Add chicken mixture and soy sauce.
6. Mix well and spoon into serving platter.
7. Top with Cilantro and Nuts.
8. If you're one of those who have a natural aversion to Cilantro you can substitute green onion.
