This isn't a fast recipe but it is certainly cheap! I think I make 6 pockets for something like 30 cents each. I got the pocket recipe itself somewhere online looking for one that didn't use pizza dough or yeast. The filling is my own creation.
Ingredients:
3 cups flour
1 tablespoon sugar
1 teaspoon salt
1/3 cup butter
1 teaspoon baking powder
1/2 cup milk
2 hot dogs
2 slices american cheese
1/2 cup ketchup
1/4 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
Directions:
1. Preheat oven 350 degrees.
2. Mix flour, sugar, 1 tsp salt and baking powder.
3. Cut in butter.
4. Add milk and kneed into dough and rest 10 minutes.
5. While dough is resting, prep filling by slicing hot dogs into thin dimes .
6. Mix seasoning and 1/4 tsp salt into ketchup and microwave 20 seconds (this makes the ketchup taste like pizza sauce.
7. Mix hot dog dimes into ketchup. Set aside.
8. Cut cheese slices into thirds and set aside.
9. Divide dough into 6 balls and roll out into 6 circle on floured surface.
10. On one side of the circle, add a peice of cheese.
11. Onto cheese, spoon 1-2 tbs of filling.
12. Use finger to make that edge of the circle half wet or the dough might not seal correctly.
13. Pull other half of the circle of dough over filling and use a wet fork to crimp the edges. Use a knife to trim the edges. (Trimmed dough can be used to make more pockets if you add a bit of water and kneed it smooth a bit.).
14. Put on greased cookie sheet and bake 20-30 minutes until golden brown.
