Idaho Potato Galette

The most traditional of the galettes. It takes a little longer to cook but it is well worth the effort.
Ingredients:
4 tbs unsalted butter
4 tbs peanut oil
1/2 cup white onion,finely chopped
3 pounds white potato (idaho if you can),peeled and cut into 1/4 inch slices
4 fresh garlic cloves, minced
2 tsp. fresh rosemary, chopped
1 tsp. sea salt
1/4 cup italian parsley, chopped
Directions:
1. Divide the butter and oil between two skillets and heat over medium high heat until the butter melts.
2. Divide the onion between the two skillets and saute until tender.
3. Increase the heat and add the potatoes, garlic, rosemary, and salt divided between the two skillets. Cook until the potatoes are golden.
4. Using a metal spatula, press and flatten the potaoes into a uniform thickness.
5. Cover the skillets and reduce the heat to medium, and cook until the bottom of the potatoes are brown, about 10 minutes.
6. Turn the entire galette over, and brown the other side. This will take about 15 minutes more.
7. Slip the galettes onto plates, divide them and serve with parsley.
