Ichdeera (Beef and Lentil Stew)

Adapted from The Complete Round the World Meat Cookbook. You can also make this with round. Water can be substituted for beef broth.
Ingredients:
1 cup uncooked lentils
boiling water
2 tablespoons olive oil
3 lbs beef chuck, cut in 1-inch cubes
3/4 cup chopped onion
1 garlic clove, minced
3 cups beef broth
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon oregano
Directions:
1. Cover lentils with boiling water. Let soak while preparing meat.
2. Heat oil in a large pot.
3. Brown beef and onions.
4. Add garlic, broth, salt and pepper.
5. Cover and cook over low heat for 1 hour.
6. Drain lentils.
7. Add lentils and oregano to pot.
8. Cover and cook 30 minutes longer, or until meat and lentils are tender.
