A wonderful treat, especially on a hot day. I keep a tray of coffee ice cubes in my freezer during the summer so that I can always whip up a batch of these drinks. This uses skim milk & fat-free chocolate syrup, so it's not only cheaper, but also lower calorie than the iced coffee sold at most coffee shops. I have used both brewed and instant coffee and it works well with either kind. (Prep time given is for freezing the coffee ice cubes, cook time is for actually making the drink.)
Ingredients:
1 1/2 cups coffee (frozen into ice cubes)
2 cups skim milk
1/4 cup fat free chocolate syrup
1/4 cup white sugar
Directions:
1. Freeze coffee into cubes. (I like to keep an ice cube tray filled with leftover coffee in my freezer just for this purpose.).
2. Combine all ingredients in a blender and blend until smooth.
3. Pour into glasses and enjoy!
