I Am Stuffed Said The Acorn Squash

Either use for a nice healthy brunch or as a side dish, perhaps as an accompaniment to a bisque. Serve with bread sticks and sweet creamery butter.
Ingredients:
2 small -medium acorn squash
1/2 pound turkey sausage, bulk
1/4 cup onion
1 egg
1 tbs milk
1/2 cup fresh baby spinach, finely chopped
3/4 cup bread cut into small cubes (2 slices, no crust) whole wheat if possible
1/4 cup dried cranberries (or raisins)
4 tbs maples syrup
season to taste
Directions:
1. Wash outside of squash; cut squash in half and remove seeds; you can discard seeds or save for planting.
2. Select a piece of cookware to accommodate the four halves of the squash like a large skillet.
3. Place 1 or 2 dampened folded paper towels in the bottom of the pan.
4. Place the squash cut side up on top of the wet towels.
5. Cover the skillet.
6. Cook on medium heat until vapor escapes from under the cover, about 4-6 minutes; turn to low.
7. Cook on low about 15 minutes or until fork tender.
8. While the squash is cooking, dice the onion.
9. Crumble the sausage into the small skillet, or any of the other small utensils.
10. Cook on medium heat until the sausage has lost its pink color.
11. In a bowl, combine the rest of the ingredient.
12. Mix with a fork.
13. Add this mixture to the cooked sausage and onion.
14. When the squash is fork tender, use a fork and pierce the yellow, meaty flesh 4-6 times in each half of the squash.
15. Add about 1 Tbs. maple syrup (or 1 tsp butter) to each.
16. Allow a minute or so to flavor the squash.
17. Then add the sausage mixture to each squash, dividing it between the halves.
18. Re-cover the large skillet and return to low heat for about 10 minutes. If the paper towel has dried out, add enough water to re-wet it, a scant 1/4 cup of water.
19. Season to taste.
20. Serve as a side dish with meat or poultry or as a main course with a bread stick and salad.
