Dutch huzarensalade, good with BBQ or as is.
Ingredients:
- potatoes, 1kg
- apples, 2 (golden delicious or granny smith)
- peas & carrots, or macedonia, drained weight approx 500g
- gherkins, drained weight approx 400g
- pickled onions, drained weight approx 200g
- mayonaise and/or a bit of salad dressing, and/or a bit of vinegar (or juice from gherkins/onions) - i added mayo and a bit of vinegar
- can of spam, or something similar, can also be replaced by cooked ham, or even beef (soup meat)
Directions:
1. unskin potatoes, cut into squares (1-1.5cm), boil until,soft
2. drain (separately) potatoes, vegetables, gherkins, pickled onions
3. slice gherkins (.5cm), then cut half or in fourths
4. cut SPAM and apples into squares (1cm)
5. slice pickled onions in half
6. mix everything and add mayonaise/vinegar/..
7. cool in the fridge for at least an hour or two, a day enables the flavours to mix well
8. serve with boiled egss/baguette/BBQ
