Hurry Hurry Superb Fried Fish Fillets

This is so easy that I can have supper ready in twenty minutes and so good that there is never a scrap leftover. My DH loves this in a sandwich but I find it so good that I don't want to cover the taste up with anything so I eat it as is. I also highly recommend that you only use fresh fish for this recipe because while it'll still be good using defrosted fish it won't taste half as delicious.
Ingredients:
4 flounder fillets (or other similar thin mild flavored fish)
2 eggs
1 cup breadcrumbs
1 (2/3 ounce) packet dried italian seasoning (good seasons)
1 dash salt
1/2 lemon, juice of
6 tablespoons mayonnaise
1 pinch garlic powder
1/2 teaspoon red wine vinegar
1/2 teaspoon dill
Directions:
1. Wash flounder fillets and remove center tough bony part if any.
2. Mix breadcrumbs with seasoning packet.
3. Dip fillet in breadcrumbs, then into beaten eggs, then again into breadcrumbs on both sides.
4. Heat oil in frying pan over high heat. When sizzling hot add fish.
5. Lower flame to medium high and continue frying until brown and crispy.
6. Do the same on the other side.
7. Serve with slices of lemon or tartar sauce and your favorite sides.
