this is one of my favourites,delicious alone with a cup of tea,or, with a dollop of fresh cream as a dessert,jam can be substituted for canned pie apples
Ingredients:
1 cup marg
1 cup sugar
2 eggs,beaten
1 tspn vanilla essence
4 cups flour
4 tspn baking powd
any jam
icing sugar for dusting
Directions:
1. cream marg and sugar
2. add eggs
3. add essence,mix well
4. add flour and baking powd to form soft biscuit dough
5. press onto a baking tray,keep aside 1/4 of dough
6. spread jam
7. grate the rest of dough
8. bake at 180 degrees till light brown on top
9. remove from oven,dust with icing sugar,cut whilst hot
