Hungarian Plum Dumplings

These dumplings are what I grew up on and they are to die for when plums are in season, it has a great plum flavor along with sugar and cinnimon....this can also be served with warm plum sauce too.....enjoy...it is a taste that will bring back memories.
Ingredients:
12 to 16 plums, seeded and cut in half.
cinnimon as desired
sugar cubes for each half of plums
2 cups or more of bread crumbs plain
sugar for bread crumbs, add as desired for sweetness.
1/2 cup butter
2 cups flour
2 cups cooked,riced potatoes, cooled ( about 4 medium )
1 teaspoon salt
2 eggs
Directions:
1. Cut butter into flour as for pie crust.
2. add potatoes and salt, stir until mixed in.
3. add eggs and knead dough well.
4. roll out on floured board to 1/4 inch thickness.
5. cut into 3 inch squares.
6. place a plum with sugar cube in each piece and sprinkle with some cinnimon.
7. pinch dough around plum to form balls ( dust hands with flour )
8. drop into boiling salted water and boil about 15 minutes.
9. drain and rinse.
10. heat butter in frying pan and add bread crumbs, brown till golden
11. add desired amount of sugar and cinnimon
12. place dumplings in pan and roll around to coat evenly.
13. serve warm...or cold....plum sauce can be drizzled over top if desired.
14. enjoy
