A simple dish to eat with bread for dipping or as a salsa with grilled fish or chicken.
Ingredients:
4 tomatoes
2 onions
4 red capsicums
olive oil
sugar
salt
pepper
paprika
Directions:
1. Place equal amount of tomatoes, onions and capsicum in olive oil in a roasting dish.
2. Season with sugar, salt, pepper and paprika.
3. Roast in oven over low heat 180 degrees C until caramelised and soft (approximately 20-30 minutes).
