A friend of mine turned me onto this egg salad alternative. Don't get me wrong, I love mayo just as much as the next guy...but this is a low-fat, high protein, high flavor alternative...that would travel well for a beach picnic.
Ingredients:
1 egg
hummus (whatever flavor you like...i like kalamata olive)
sandwich bread
Directions:
1. Boil your egg.
2. Peel and cool egg.
3. Using a fork, break it up into chunks.
4. Stir in a couple of forkfuls of hummus until the consistency is like egg salad.
5. Make yourself a sandwich.
6. Especially enjoyful with some home-made pita chips.
