A southern classic cake reworked into a low cal/fat version. Very good, maybe a little dry..
Ingredients:
2 eggs
2 egg whites
3/4 cup unsweetened applesauce
1 1/2 tsp.vanilla extract
3 cups all purpose flour
1 3/4 cup splenda no calorie
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
2 bananas
1/5 cup pecans
8 oz. crushed pineapple
3/4 cup splenda no calorie
Directions:
1. Mix eggs til frothy. Add applesauce and vanilla. In another bowl, mix dry ingredients..flour, sugar, baking soda, and salt. Add 1/2 of the flour mixture to wet ingredients mix well. Add the other half and beat for one minute. Srir in bananas and pecans. Drain pineapple reserving juice, add pineapple to batter.
2. Scrape into a prepared bundt pan and bake 325 for about an hour.

4. 3/4 cup splenda and 2 Tbsp. +/- of pineapple juice, mix well and drizzle over cake while warm.
