Hubby's Favorite French Onion Soup

This is just a wonderful soup... a winter-time favorite!
Ingredients:
4 medium onions, sliced
3 tablespoons butter
21 ounces beef broth, condensed
1 1/2 cups water
1/8 teaspoon pepper
1/8 teaspoon thyme leaves
1 bay leaf
4 slices french bread, toasted
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
Directions:
1. In a large nonstick pot melt butter over med-high heat. Stir in onions to coat with butter. Cook uncovered 10 minutes stirring often.
2. Reduce to medium low heat and cook for 40-45 minutes, stirring occasionally until golden brown.
3. Stir in broth, water, pepper, thyme and bay leaf- bring to a boil and then reduce heat. Cover and simmer for 15 minutes.
4. Remove bay leaf.
5. Place toasted bread in the bottom of oven proof bowls, add onion soup and top with mozzarella. Sprinkle with Parmesan. * do not use glass bowls*.
6. Set oven to broil.
7. Place bowls on cookie sheet.
8. Broil for 1-2 minutes or until cheese is melted and golden brown.
