Hsh Brown Potato Salad

this is a chunky and creamy salad. great for picnics
Ingredients:
1 lb potato
1/2 cup cider vinegar
1/2 cup red onion
1/2 cup plain fat-free yogurt
1 teaspoon dijon mustard
1/4 cup parsley
2 teaspoons cilantro
1/4 teaspoon pepper
1 cup cherry tomatoes
Directions:
1. Fill the bottom of a steamer with water and bring to a boil.
2. Place the potatoes inside the basket, cover and steam for about 10 min until tender. Cool for 5 min and cut into chunks.
3. Combine the yogurt and the rest of ingredients. Put in the fridge for a few hours until chilled.
