Howard's Tomato Sauce

Make up a batch of Howard's Tomato Sauce when your recipe calls for tomato sauce. This homemade sauce is tasty and satsifying.
Ingredients:
2 tablespoons olive oil
3 cups vertically sliced onion
1 cup chopped green bell pepper
2 garlic cloves, minced
1 cup water
1 cup dry red wine
1/2 cup chopped fresh parsley
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon cumin seeds, crushed
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper
1/4 teaspoon freshly ground black pepper
1 (28-ounce) can whole tomatoes, undrained and coarsely chopped
Directions:
1. Heat oil in a large Dutch oven over medium heat. Add onion, bell pepper, and garlic; saute 7 minutes or until tender. Stir in water and remaining ingredients, and bring to a boil. Reduce heat, and simmer, uncovered, until reduced to about 6 cups (about 1 1/2 hours).
