How Do I Make - Potato Salad

Certainly nothing original about potato salad, but it's a classic, and doesn't need messed with! This is how I've made it my whole life. We love to eat it just after it's made, warm, but also can't wait to finish off the left overs the next day! Read more !
Ingredients:
about 3lbs potatoes, cubed(i just use good ol' russets, and i don't peel them)
1/4 cup malt vinegar(i was taught this using red wine vinegar, but since discovering malt, this is the one i use
5 eggs, hard boiled and chopped
1/2 vidalia onion, diced(i use a lil less if i have to use a different onion variety
2 stalks celery, chopped
1/4 cup dill pickle relish
about 3/4 cup mayonnaise, no subs
2t yellow mustard
kosher or sea salt and fresh ground pepper
Directions:
1. Boil potatoes in water until JUST tender, about 10 minutes. Do not over cook.
2. Immediately drain in colander.
3. In large bowl, combine mayo and mustard and stir well.
4. Add onion, celery and relish and stir again.
5. Drizzle vinegar over potatoes in colander, and carefully shake well to coat.
6. Add potatoes and eggs to the dressing in the bowl and add a bit of salt and pepper and fold carefully to incorporate fully.
7. Serve immediately or refrigerate. :)
