Houdini Pumpkin Praline Pie

This pie disappears like Harry Houdini! It is one of the family favorites. I used pumpkins grown in the back yard and made 6X the recipe, measured 3 cup portions into quart size zipper bags, then into the freezer they went. Read more . Perfect for a quick pie. Just thaw, prepare the praline mixture and you are off. The kids were very excited to have their favorite pie for Thanksgiving! .
Ingredients:
9 pie crust. see my homemade piecrust from scratch recipe.
praline filling
1/3 cup chopped pecans.
1/3 cup brown sugar.
3 tbs. soft butter, softened.
pumpkin filling
2 eggs, slightly beaten.
1/2 cup white sugar.
1/2 cup brown sugar.
1 tbs. flour.
1 tsp. cinnamon.
1/2 tsp. salt.
1/4 tsp. ground nutmeg.
1/4 tsp. ground ginger.
2 cups cooked pumpkin puree (fresh if you can, unsipced canned if you must, see my recipe for easy homemade if you will).
1 can sweetened condensed milk.
Directions:
1. Preheat oven to 450F.
2. Crust prep:
3. Prick pie shell sides with fork.
4. Combine praline filling ingredients and press into bottom of unbaked pie shell.
5. Bake in 450' oven for 10 minutes until bubbly.
6. Remove and cool on rack for 5 minutes.
7. Reduce oven temp. to 350F.
8. Pie filling:
9. Mix together eggs, sugars, flour, salt and spices.
10. Blend in pumpkin.
11. Gradually add milk.
12. Pour into 9-inch baked, cooled pie shell.
13. Bake 350F for 55 minutes.
