These yummy bars will disappear fast! Adapted from The Cake Doctor Returns
Ingredients:
1 stick butter, melted
3 large eggs, divided
1 (8oz) package reduced fat cream cheese, room temperature
1 teaspoon vanilla
2 cups powdered sugar
1/2 cup sweetened flaked coconut
1/2 cup chopped pecans, optional
1 box plain yellow cake mix or 1 package plain butter-recipe golden cake mix
Directions:
1. Preheat oven to 350 degrees
2. TO MAKE CRUST
3. Place cake mix, melted butter and 1 egg in a large mixing bowl; beat on low speed with an electric mixer until ingredients are incorporated, about 1 minute
4. Press the batter into the bottom of and partially up the sides of an ungreased 13x9 inch metal baking pan
5. TO MAKE THE FILLING
6. Place cream cheese in the same mixing bowl; beat with an electric mixer on low speed until fluffy, about 30 seconds
7. Add remaining 2 eggs, vanilla and powdered sugar
8. Beat on low speed until smooth and combined, about 1 minute,Fold in the coconut
9. Pour the mixture over the crust and smooth the top with a rubber spatula or the back of a large spoon
10. Scatter the pecans, if using, over the top
11. Bake on the center rack until the edges are browned and the center is firm to the touch 45-50 minutes
12. Transfer the pan to a wire rack and let cool for 30 minutes before cutting into bars
