Hot Tuna and Cheese Sandwiches

A simple, tasty, family meal - a once a month treat since kids shouldn't have tuna too often. This recipe is lower in fat and higher in tuna then others I have seen. Makes good leftovers, each stored in their own packet, easy to reheat in toaster oven.
Ingredients:
16 slices bread
3 (6 ounce) cans albacore tuna in water, drained
3 tablespoons miracle whip
1/4 cup celery, chopped
1/4 cup green pepper, chopped
1/4 cup sweet pickle, chopped
1/4 cup stuffed green olive, chopped
6 ounces reduced-fat sharp cheddar cheese, cubed
2 hard-boiled eggs, cubed
Directions:
1. Preheat oven to 300'.
2. Break up tuna mixing it with Miracle Whip.
3. Mix in remaining ingredients.
4. In preheated oven, lightly toast whole wheat bread in pairs (so one side gets toasted).
5. Spread mixture onto toasted side of bread.
6. Wrap in foil and put into oven for 30 minutes until heated through and the cheese is melted.
