Hot & Sour Soup W/ Tofu

Chinese Hot and Sour Soup is a traditional Asian soup recipe, although this version is less authentic since it is vegetarian. This vegetarian and vegan recipe uses tofu instead of meat. Eat it for breakfast, as is commonly done in Asia, or as an accompaniment to a vegetarian Chinese meal.
Ingredients:
6 ounces chicken broth
1 cup tofu
8 ounces mushrooms
4 ounces water chestnuts
5 tbl rice wine vinegar
4 tbl soy sauce
4 ounces bamboo shoots
1 tsp hot sauce
1/4 tsp hot pepper flakes
1 egg
5 green onions
Directions:
1. Bring vegetable broth to a boil in a large pot. Add all ingredients except scallions.
2. Reduce heat to a slow simmer, and allow to cook for at least 20 minutes. Add a bit of flour mixed with water to thicken the soup, if desired.
3. Add scallions and allow to cook for 3 to 5 more minutes. Add more soy sauce or hot sauce to taste.
