Hot Potato Sausage And Onion Salad

A bold potato salad which can stand alone or accompany a main course.
Ingredients:
500g small waxy potatoes e.g. charlotte, peeled and halved
2 x 227g pack smoked pork sausage, such as mattesons
1 large spanish onion, peeled and cut into 8-10 thick wedges, making sure each is attached at one end by a little bit of root
1 tbspn olive oil (more if the pan is non-stick)
1 tbspn grain mustard
1 tbspn red wine vinegar
2 tbspns groundnut or sunflower oil
small bundle chives, chopped
salt and pepper
Directions:
1. Boil the potatoes in salted water until tender.
2. Heat the sausage as per the packet instructions. Peel the skin off the sausage when it is ready, then chop into bite-sized chunks.
3. Fry up the onions in the olive oil over a medium heat for 15-20 mins, turning occasionally until they are soft and brown edged.
4. Meanwhile, make the dressing by mixing together the mustard, vinegar, oil and seasoning.
5. When the onions are cooked, remove from the pan. Raise the heat and fry up the potatoes for about 10 mins until crisp and golden.
6. Then tip the onions and sausage in with the potatoes and fry for a few minutes.
7. Transfer the mix to a bowl and pour the dressing over the top and the chives. Toss thoroughly and set aside to soak in for 10 mins.
8. Eat and enjoy!
