this recipe uses a box corn muffin mix.. but it is just as easy to use your favorite corn muffin recipe.. I also have used a lemon hot pepper jelly in these that is really good.. the recipe come out of a Betty Crocker pamphlet. Read more ..
Ingredients:
1 package ( 6.5 oz.) betty crocker golden corn bread & muffin mix
1/3 cup milk
2 tbsp. butter, melted
1 egg
2 tbsp. canned green chilies, chopped
approx. 3 tbsp. hot pepper or jalapeno pepper jelly
****or use your favorite corn muffin recipe
Directions:
1. prepare muffin mix as directed on the package, using milk, butter, and egg
2. stir the chilies into the batter. don't over mix
3. divide the batter evenly among the muffin cups. use paper-cup lined mini-muffin pan ( paper-cup size 1 3/4 x 1 inch )
4. top each with 1/4 teaspoon jelly in the middle of the muffin
5. press jelly lightly into the batter
6. bake at 400' F for 12 to 14 minutes or until golden brown
7. immediately remove from muffin pan.
8. top each muffin with additional 1/4 teasp. jelly
9. serve warm
