This is a recipe my mother used to make when I still lived at home. She recently found it while cleaning out her recipe box and I decided to post it here. It's relatively inexpensive and who doesn't want to save money on meals.
Ingredients:
4 hot dogs
1 1/2 lbs small potatoes
2 tablespoons butter, divided
1 cup onion, sliced
1/3 cup green pepper, chopped
2 teaspoons yellow mustard
1 (15 ounce) can spaghetti sauce with meat
1 1/2 teaspoons salt
4 tablespoons parmesan cheese, grated
Directions:
1. Preheat oven to 400 degrees F.
2. Cut hot dogs into 1 slices.
3. Peel potatoes; cut into 1/4 thick slices.
4. Parboil 5 minutes. Drain.
5. Melt 1 Tab. butter.
6. Cook onion and green pepper until tender.
7. Add hot dogs and brown lightly.
8. Stir in mustard, spaghetti sauce and salt; mix well.
9. Line bottom of medium baking dish with potatoes saving a few for the top.
10. Add hot dog mixture.
11. Put remaining potato slices around edge.
12. Melt remaining butter and brush potato slices.
13. Sprinkle cheese over potatoes.
14. Bake 25-30 minutes.
