This recipe was submitted by Dorothy Fosness for the Bricelyn Women of E.L.C.A Cookbook printed June 1993. Bricelyn, Minnesota is a little town where my dad grew up. This hotdish is a little different because it has both rice and potatoes in it- how rebellious!
Ingredients:
1 lb lean ground beef
2 teaspoons salt
1 cup diced celery
1 large onion, chopped
2 1/2 cups raw potatoes, cubed
1 cup carrot, diced
1/4 cup raw rice
3 cups boiling water
1/2 cup tomato soup
1 cup cream of mushroom soup
Directions:
1. Brown hamburger, salt, celery and onion, and drain fat.
2. Add remaining ingredients. Bake at 350 degrees for 1 1/2 hours in a 2 quart casserole dish.
