It's hard to have a true Irish meal without a side of some flavor mash . This one is particulary good with a nice steak.
Ingredients:
2 3/4 to 3 lbs russet potatoes, peeled and cut into 1 inch pieces
1 cup half and half
1 stick of unsalted kerrygold butter, in pieces
salt and pepper to taste
1/3 cup horseradish
Directions:
1. Cook and drain the potatoes
2. Mash until almost smooth
3. In a small skillet over medium, melt butter.
4. Stir the butter into potatoes and add Half and Half and horseradish
5. Season with salt and pepper
