Horseradish Encrusted Salmon |

Salmon fillets are topped with a tasty combination of horseradish-ginger-breadcrumbs. From Prevention April 2006. Ingredients:
2 teaspoons olive oil, divided |
1 tablespoon olive oil |
12 ounces salmon fillets |
1/3 cup breadcrumbs |
2 tablespoons grated gingerroot |
2 tablespoons horseradish |
Directions:
1. Oil baking pan with 1 tsp.of oil. 2. Place salmon in the dish. 3. In processor, blend the remaining ingredients. Place this mixture on each fillet. 4. Bake in 350°F oven for about 12 minutes. |
