HORSERADISH BEETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rinsley Estate in Waxahachie, Texas in 1994.
Ingredients:
15 ounce can whole beets
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon prepared horseradish
1/2 teaspoon fresh lemon juice
1/4 teaspoon granulated sugar
2 teaspoons chopped fresh parsley
Directions:
1. Combine all ingredients except beets then mix well and blend.
2. Refrigerate covered at least two hours.
3. Cook beats in medium saucepan over medium heat until hot then drain well.
4. Serve with sauce over top.
