Hoppin' John is a traditional southern New Year meal... with as many variations as chili! An ooops during preparation 20 years ago created what has now become the ONLY way we make it! The only variation is I now use a homemade version of the oops , but you can still use canned, if desired.
Ingredients:
1lb dry black eyed peas, rinsed and soaked over night
1lb left over ham steak, diced
1 large onion, diced
1-3 jalapenos, diced
4 stalks celery, chopped
3 cloves garlic, minced
3 cups chicken, pork, or veggie stock
28oz enchilada sauce(this is the oops... i meant to use a can of tomato sauce way back when and put this in instead... beginning the new tradition! this time, i used this sauce basic enchilada sauce
1t liquid smoke
kosher or sea salt and fresh ground black pepper
1lb greens(turnip, collard, or mustard), roughly chopped
about 6-8 servings wild rice, cooked
*i now use applewood smoked salt and our ham is smoky, so i don't use any extra liquid smoke
Directions:
1. Combine all ingredients except greens, rice and salt and pepper in large slow cooker.
2. Cook on low for about 10-12 hours, until beans are tender.
3. Taste and season, as needed.
4. Add greens a lil at a time, if needed, until all our warmed through and wilted.
5. Serve over cooked wild rice.
