It is said if you eat these on New Years Eve you will have good luck for the rest of the year, a southern tradition that we tried this year and so for it has worked!!
Ingredients:
1 tablespoon oil
1 large ham hock
1 lb smoked sausage
1 cup onion, chopped
1/2 cup celery, chopped
1/2 cup red pepper, chopped
1 tablespoon chopped garlic
1 lb black-eyed peas, soaked overnight and rinsed
1 quart chicken stock
1 bay leaf
1 teaspoon dry thyme leaves
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons finely chopped green onions
3 cups steamed white rice
Directions:
1. Heat oil in large soup pot.
2. add ham hock and sear on all sides, for about 4 minutes.
3. Add onion, celery, red pepper, and garlic, cook for 4 minutes.
4. add black eyed peas, chicken stock, bay leaves, thyme and salt and pepper.
5. Bring to a boil, reduce heat and simmer for 40 mins, or until the peas are creamy and tender, stirring occasionally, adding water and or stock as needed.
6. Stir bean mixture into cooked white rice and adjust seasonings to taste.
7. garnish with green onion.
