This is another recipe from the all-time classics.
Ingredients:
4 slices bacon, diced
1 medium onion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 (15.5 oz.) can blackeye peas
3 cups hot cooked rice
few dashes of hot sauce (optional)
Directions:
1. In a medium saucepan, combine the bacon, onion, salt and pepper over medium heat.
2. Cook 10 to 12 minutes or until bacon is crisp and onion is golden, stirring frequently.
3. Reduce heat to low. Stir in blackeyed peas and rice; continue stirring mixture for 2 to 3 minutes, or until heated thoroughly.
