Hooters Gone Sweet

I came across this recipe for hooters wings a while back, I've never tried hooters so not sure if it is authentic. Hooters or not it is yummy, and with a twist I get mine sweet and spicy just the way i like it.
Ingredients:
for the sauce
1/2 cup butter
1/2 cup louisiana hot sauce
2 dashes pepper, ground
2 dashes garlic powder
brown sugar and ketchup to taste and optional ( if you like it sweet and spicy)
for breading
1 cup flour
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
20 chicken wings
oil for frying
Directions:
1. Clean wings , discard the tips, and cut each at the joint into two.
2. Soak for 10 min in water with alittle bit of salt and splash of vinager or lemon juice, rinse with water and pat dry.
3. Combine the flour, paprika, cayenne pepper, and salt in a small bowl.
4. Put the wings into a large bowl and sprinkle the flour mixture over them, coating each wing evenly.
5. Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.) usually it doen't take that long as soon as you see the breading caking on the wings , it is ready.
6. Heat oil in a deep fryer to 375 degrees.
7. You want just enough oil to cover the wings entirely - an inch or so deep at least.
8. Combine the butter, hot sauce, ground pepper, and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients are well blended.
9. You can vary the heat according to taste the more butter to hot sauce ratio the milder the sauce is.
10. I like mine sweet and spicy so at this point I put part of the sauce aside and add brown sugar and some ketchup, to taste
11. Put wings into the hot oil and fry them for 10 to 15 minutes or until some parts of the wings begin to turn dark brown.
12. Remove the wings from the oil to a paper towel to drain.
13. But don't let them sit too long, because you want to serve the wings hot. Quickly put the wings into a large bowl.
14. Add the hot sauce and stir, coating all the wings evenly.
15. You may fry the wings ahead and heat them in the sauce before serving, you may skip the breading if you're not a fan but in this case you season the wings with salt and cayenne, and paprika.
16. You can also put the wings in a baking pan and broil them then cover them with sauce and return to oven untill sauce thickens.
17. And if you're really desperate for time, season with soul seasoning, throw the wings in a pan cover with a mixture of hot sauce butter and brown sugar and place in the oven .
18. whatever way you choose, just make sure you have a roll of paper towels handy .
