Honeyed Asparagus Bundles

Entered for safe-keeping. From First 3/09/09. This was a big hit when it was originally printed in 2009. This has different proportions of ingredients from a similar recipe Honey Mustard Asparagus #66680.
Ingredients:
2 lemons
1 tablespoon dijon mustard
1 teaspoon honey
2 tablespoons extra virgin olive oil
1 tablespoon fresh tarragon
2 lbs fresh asparagus, trimmed
salt, to taste
black pepper, to taste
Directions:
1. Using channel knife, cut 8 strips from lemon peels. Juice lemons.
2. In bowl, whisk together lemon juice, mustard and honey.
3. Gradually whisk in olive oil. Stir in tarragon.
4. Arrange asparagus into 8 piles. Using lemon-peel strips, tie asparagus piles into bundles.
5. Set bundles in steamer basket over large saucepot of simmering water.
6. Steam bundles 3 minutes, or until stalks are crisp tender.
7. Using tongs, remove bundles from basket.
8. Season with salt and black pepper, if desired.
9. Drizzle with dressing.
